Pumpkin Chocolate Chip Cookies
I'm someone who loves chocolate chips in her cookies and y'all don't have to agree, but I think it makes everything ordinary extraordinary!
Here is the recipe for these delicious pumpkin treats.
2 1/2 Cups AP Flour
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
1 Teaspoon Ground Cinnamon
1/2 Ground Nutmeg
1/2 Teaspoon Salt
1 1/2 Cup Sugar
1 Stick Butter, soften
1 Cup LIBBY'S Pure Pumpkin
1 Larger Egg
1 Tsp Vanilla Extract.
*Note*
● I have used unsalted butter in this recipe, its about the only butter I usually have. Although the original recipe didn't ask for unsalted, I'm sure that with any butter it would be perfect.
● Also as you can see, I've made Chocolate Chip Pumpkin Cookies, and the recipe doesn't call for Chocolate chips, I've eyeballed it. I say it depends on how much you like chocolate in your cookies.
Directions
◆ Pre-heat oven to 350ºF
◆ In a large bowl, combine flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt. Best to sift the dry ingredients.
◆ In your mixer, with a paddle attachment, at medium speed beat the butter and sugar until it is a light in color and fluffy
◆Beat in the Pumpkin, egg, and vanilla extract. After well combined, reduce the speed.
◆Slowly "rain" in the dry ingredients into the mixer, and don't forget to scrape your bowl, best to scrape after each time you rain in the dry ingredients.
◆ At this point, you have the option to add your chocolate chips into your batter. Just toss them in, at low speed, and once all ingredients are well mixed, you are ready to put onto a cookie sheet.
◆ Bake cookies for 15-18 minutes, but I've worked them for 13 minutes, depending where you are located or the oven you are working with it depends on the timing. Just keep an eye on them. You will know when they are ready. Once pulled out, put onto a cooling rack for 5-8 minutes before serving.
